PREPARATIONS
1. Crumble the yeast in a bowl. Heat the milk to approximately 37 °C(98 °F). Pour it into the bowl and stir.
2. Add sugar, salt, egg, cardamom, most of the flourand last the butter cut in small pieces. Knead the dough in a dough mixer for 10–15 minut
3. Cover the dough with a clean cloth and let itrise while covered at room temperature for about 45
4. For the filling, stir together sugar, brown sugar, cinnamon and vanilla sugar.
5. When the dough is ready, knead it a little and then divide it in two pieces.
6. Roll out each piece so it is about 25×50 cm wide and spread the filling on top of it. Roll the dough the long way and cut in pieces, about 1,5 cm thick.
7. Put the buns with the cut edge upward in paper molds. Cover with a clean cloth and let the buns rest for about 30 minutes.
8. Beat the egg and brush it carefully on the buns and sprinkle pearl sugar on top.
9. Bake in the oven (225°C/435°F) for 5–6 minutes. Allow to cool on a rack. Enjoy!
